Wild-Caught Shrimp Casserole

INGREDIENTS
- 1 ½ pounds wild-caught American shrimp: peeled and deveined
- 1 ½ cups of rice
- ½ cup of butter
- 1 tablespoon of Italian-blend seasoning
- 4 small, chopped Roma tomatoes
- 4 chopped green onions
- 3 chopped sticks of celery
- 2 minced garlic cloves
- 1 chopped green bell pepper
- 8 ounces of feta cheese crumbles
- 1 squeezed lemon
DIRECTIONS
Heat oven to 450°F. Prepare rice according to package instructions. Melt butter in a large skillet over medium heat and combine vegetables and seasoning– sauté for 10 minutes or until tender. Add in shrimp and cook for 3 minutes or until shrimp turn pink. Combine shrimp mixture and rice, then sprinkle cheese crumbles and squeeze lemon juice over top. Coat a 13 x 9-inch baking dish with non-stick cooking spray and bake for 15 minutes. Let stand for 5 minutes, serve and enjoy!
