Recipe: Sugar Cane Wrapped Grilled Shrimp

Ingredients:
1 pound fresh Wild American Shrimp, peeled, deveined, cleaned, and blotted dry
1/4 pound pork belly fat, diced
2 egg whites
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon white pepper
1 tablespoon corn starch
1 foot of fresh sugar cane
Directions:
Put shrimp in the freezer for 15 minutes. Peel off the hard cover of the cane and cut into 4-inch sections, then quarter the sections. In a food processor, combine all ingredients except the sugar cane. Process for two minutes until all ingredients are ground. Thinly wrap the ground mixture around the cane sections. The thickness of the mixture should be approximately a half-inch. Grill over hot coals until the shrimp mixture turns pink.
