This Cajun Shrimp and Sausage Vegetable Skillet from therecipecritic.com makes for a great 20-minute low-carb meal packed with awesome Cajun flavor, complete with shrimp, sausage and summer veggies!


This recipe looked so delicious and easy that we had to try it at home!

We picked up these beautiful Peeled and Deveined wild-caught American shrimp from our local seafood wholesaler that provided us with fresh P&D shrimp from Biloxi Freezing and Processing, Inc.

 

 

 

 

 

 

 

 

 

 

 

First, we mixed it up a bit by subbing green beans for the asparagus, adding onions and decided not to include sausage (we had some non-meat eaters in our midst). We began by sauteeing the zucchini, bell peppers and onions in a large saucepan with olive oil:

After letting the vegetables simmer and cook down a bit, we added the beautiful, fresh Wild American Shrimp:

 

We let the vegetables and the shrimp all simmer and cook down in the olive oil until the shrimp were a nice pink all the way through. Then added the Cajun seasoning!

 

The entire process took about 20 minutes and everyone loved it!
